As a famous archaeological site for the Mayan Civilization, Copan is a region rich in Honduran cultural history, which also includes coffee cultivation. This is one of six key coffee growing regions. Specialty organic coffees are processed in the Northwest region of Copan. Over 90% of coffee growers are smallholder farmers and generally farm organically by default. IHCAFE is a government agency aimed at helping framers confront coffee growing challenges. It’s slogan “Don’t change the coffee variety, change your attitude” speaks to the sustainable methods promoted to fight plights like CLF (coffee leaf rust).
